ROOTS


ACQUIRING THE FUNDAMENTALS OF THE COFFEE PROFESSION

PRESENTATION
A module that combines theory and practice on coffee culture, green coffee, cupping and an introduction to roasting module.
AIMS
  • Fully understand all factors linked to coffee culture which have an impact on a coffee's sensory profile
  • Be able to assess and recognise coffee's gustatory families
  • Introduction to manual roasting (burner regulator)
  • Introduction to different preparation methods
  • Be able to recognise and identify green coffee particularities
WHO IS IT FOR?
All coffee professionals who have recently started an activity or who have not had any training for several years.
SKILLS DEVELOPED
  • Capacity to analyse a data sheet to build a sales pitch
  • Capacity to advise a consumer on the choice of a coffee or a preparation method, according to the consumer's needs and expectations.
  • Fully grasp the commercial promotion of a coffee: presentation, sales pitch
  • Capacity to run a coffee workshop

LEVEL 1 - UNDERSTANDING AND BEING ABLE TO PRESENT A COFFEE

PRESENTATION
A practical module based on your range of coffee, to understand it better and be able to present and promote it.
AIMS
  • Understand the impact of preparation methods on your coffees' sensory profiles
  • Be able to assess an organoleptic profile and suggest a suitable preparation method
  • Fully understand how to prepare coffee using different methods
  • Improve knowledge of your coffee range to better promote it
  • Fully understand the methodology for looking for information on your coffees
  • Be able to create a dynamic around your range of coffee

Exclusively for Belco customers: shop sellers or salespeople

LEVEL 2 - BRINGING A RANGE OF COFFEES TO LIFE AND ORGANISING EVENTS

PRESENTATION
A module that combines theory and practice, for you to become a real benchmark within your company
AIMS
  • Understand and adapt all the parameters of coffee preparation (grind, temperature...)
  • Identify a customer's needs and point him or her towards the best solution
  • Be able to suggest a replacement coffee
  • Be able to organise an in-store cupping event
  • Know how to set a coffee scene at your point of sale (signing, packaging, promotion events... )
  • Introduction to merchandising and brand identity to energize your sales outlet
WHO IS IT FOR?
Exclusively for Belco customers: experienced salespeople, sales-team managers and directors

Have knowledge of coffee culture, fully grasp several different methods of coffee preparation and know the basics of sensory analysis.

ROASTER

LEVEL 1 - UNDERSTANDING AND TAKING ACTION ON THE PARAMETERS THAT AFFECT A ROASTING PROFILE

PRESENTATION
A module which allows roasters to know the basic techniques to assess and make decisions when roasting
AIMS
  • Fully understanding the fundamentals of roasting: heat transfer and reactions
  • Manually roast using different key points of roasting
  • Operate a roaster with a roasting curve monitoring system
  • Create a roasting scenario
  • Be able to construct a roasting profile for a coffee depending on its nature; the desired sensory profile and the preparation method used.

All roasters looking to discover new roasting tools.

LEVEL 2 - ACQUIRING A COMPLETE OVERVIEW OF THE ROLE OF A CRAFT ROASTER

PRESENTATION
5 days of pure roasting! This module consists of a wide range of modules to improve knowledge on many roasting themes. Share your experience with other roasters to test, assess, exchange and correct if necessary.
AIMS
  • Create a roasting scenario
  • Fully master the side-aspects of roasting (degassing, cooling)
  • Recognise roasting defects (visual and sensory)
  • Fully master techniques for creating a blend of coffee
  • Understand the impact of preparation methods on a coffee's sensory profile
  • Assess a coffee's organoleptic qualities
WHO IS IT FOR?
Exclusively for Belco customers: experienced roasters looking to further improve their skills

This 2-day green coffee module presents the entire methodology for green coffee buying in order to implement a quality control system in your company.

  • Fully master the fundamentals of roasting and coffee preparation in a lab
  • Be able to appreciate and assess a coffee's organoleptic qualities
  • Fully master green coffee classification systems
  • Fully master the analysis and control of green coffee
  • Be able to evaluate and identify green coffee defects

LEVEL 2 - FULLY MASTERING AND TAKING ACTION ON GREEN COFFEE

PRESENTATION
Every coffee purchased is a coffee cupped! This module will make you a highly experienced cupper, able to fully master your range of coffees.
AIMS
  • Implementation of an in-lab quality control protocol
  • Ensure the lots selected are tracked
  • Be able to appreciate and assess a coffee's organoleptic qualities
  • Gauge yourself using the various existing assessment protocols
  • Fully master verifying that quality purchased equals quality received
  • Fully master coffee grading
  • Fully master coffee screening
  • Be able to justify a refusal to purchase
